These muffins have an extra little zing to them due to the orange zest. I use mini-chocolate chips because they disperse nicely in the batter and don't sink to the bottom like the regular size ones do. These are quick and easy to make, and it makes a lot! My kids love these. They make a great after-school snack with a glass of milk. :-)
Orange Chocolate Chip Muffins
Makes 18-22
3 c. flour
1-1/4 c. granulated sugar
2 tsp. baking powder
1-1/4 c. milk
3/4 c. vegetable or canola oil
2 large eggs
4 tsp. grated orange peel
6 oz. mini-chocolate chips
Preheat oven to 350-F.
Using a 12-cup muffin tin, line the cups with paper liners. In a large bowl, combine the dry ingredients with a whisk. Make a well in the center of the flour mixture. In a smaller bowl, mix milk, oil, eggs and orange zest. Stir milk mixture into the dry ingredients just until blended. Add chocolate chips. Don't over mix! Divide batter into muffin cups and fill 3/4 way to the top. You will have batter left over to make more muffins (makes 18-22 muffins). Bake ~20 min. Don't over bake (I will always say this!). Muffins should be slightly golden on top and spring back when you touch them. Cool on wire rack.
