I rarely make a chocolate or white cake from scratch. I have done so before but have been disappointed with the results. The box cakes are so delicious, why mess with the best?
I will not, however, buy canned frosting. I think it tastes disgusting and fake. Eww! I will always make my own frosting. The flavor is SO much better for simple buttercream, but there are many other varieties -- whipped cream, seafoam, ganache, cream cheese, etc... Frosting is a great way to give a whole new twist to any layer cake.
So today is my son's 15th birthday. Happy birthday, Kevin!! He requested chocolate cake, so I baked him a Pillsbury Devil's Food Cake and topped it with this delicious frosting. I got the recipe years ago from Country Living Magazine. Try it, you'll like it!
Superquick Chocolate Buttercream
1 cup butter
6 oz. bittersweet chocolate (not unsweetened!), melted
2 cups Marshmallow Cream (Measure it out, don't go by the ounces on the jar.)
3/4 tsp vanilla
6 TB powdered sugar
Beat butter until smooth, then add melted chocolate and beat until incorporated. Reduce mixer speed to medium and beat in the marshmallow cream. Add vanilla and powdered sugar. Increase mixer speed to medium-high and beat until smooth and fluffy. Chill for 20 minutes before using. Makes about 4 cups, enough to frost a 2-layer cake with a generous amount between layers.
Oh my gosh--that sounds yummy! I don't know if I have a box of cake mix in the house right now, but maybe I could just make half a batch and we could eat it with spoons! Enjoy the celebration!
ReplyDeleteI usually use box mixes too! I hate canned icing...it is awful! I will definitely have to give this frosting recipe a try. Marshmallow cream sounds like an amazing addition!!
ReplyDeleteThat sounds great!! I'm ashamed to say that I have never made my own frosting and I don't remember when I baked a cake! My sister has been really getting into it though, so maybe in the spirit of sisterly competition I will give it a try!! Happy Birthday to your son!!

Just a thought for you, I know you can do it. I can't frost a cake, always make cupcakes but I made a red-velvet cake the other day not posted yet but soon, wicked good too. Can I just tell you I'm going into a chocolate coma just dreaming of eating that delicious goodness! Wow, does that cake look fabulous! :) The girls and I made a Halloween Funfetti cake for dessert tonight and it was quite tasty...but now I'm wishing we would have just gone with a chocolate cake!! I can almost taste it just thinking about it.

I will be trying the recipe out I have yet to find the perfect chocolate buttercream recipe. Most are made with cocoa powder and I am not big on the flavor from the cocoa powder.
