I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

Lemon Blueberry Biscuits


I have been waiting almost a year to share this recipe with you! I made them at the end of blueberry season, but since I had already posted several blueberry recipes, I thought I should wait. I wanted these to shine all on their own.  It was an exercise in patience, let me tell you, but I know you will agree it was worth the wait.

These biscuits actually melt in your mouth. I'm not kidding. The subtle lemon flavor enhances the blueberries just beautifully. They are tasty plain but the lemon glaze puts them over the top!

I got this recipe from baker extraordinaire, Marsha, at The Better Baker. Marsha and I like a lot of the same recipes because we share the same philosophy -- keep it SIMPLE and delicious! Lemon Blueberry Biscuits
Yield 12 Biscuits

2 cups flour
1/3 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 carton (8 oz) lemon yogurt*
1 egg
1/4 cup butter, melted
1 tsp. grated lemon peel
1 cup fresh or frozen blueberries


GLAZE:
1/2 cup powdered sugar
1 TB lemon juice
1 tsp. grated lemon peel


Preheat oven to 400-F.
In a large bowl, whisk together dry ingredients.  In a small bowl, combine yogurt, egg, butter and lemon peel; stir into dry ingredients just until moistened. Fold in blueberries. Drop by large spoonfuls onto an ungreased baking sheet. Bake ~15 minutes or until lightly browned. *(Make sure your container of yogurt is 8 oz, not 6 oz.)

Combine glaze ingredients; drizzle over warm biscuits.
