I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

Almond Roca Bars

These are my family's FAVORITE holiday cookie. These are incredibly simple to make. Small effort for BIG flavor. If you like Almond Roca candy, you will love these. This recipe came from my childhood friend, Jean. We used to bake together and share recipes. This was definitely a keeper, and so was she!


Almond Roca Bars

1 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1-1/4 cup flour
1/2 tsp salt
1 cup chocolate chips
1/2 cup finely chopped walnuts

Preheat oven to 325-F.  In a large bowl, beat the butter and sugars for about a minute, until creamy. Add the egg and beat again until smooth.  Add flour and salt and beat for another minute. Spread mixture into a 13x9" pan that has been lined with parchment paper. Bake for ~30 min. or until very golden brown. Remove from oven and sprinkle with chocolate chips. Let sit for several minutes until chocolate is melted then spread with an off-set spatula.  Sprinkle with walnuts. Let cool completely - these do take a while to get firm enough to cut. You can put them in the fridge to firm completely.  When ready, lift the toffee out and cut into squares. Enjoy!

  19. I agree with Kelly; I always have the ingredients on hand, like so many of your recipes (or at least the ones I have so far!). I ended up topping these with toasted almond slices since I didn't have walnuts or pecans. My husband loved them~
