Blueberry Orange Bread



I've been making this bread for years. I think I got the recipe from Taste of Home, but I'm not entirely sure about that. It's a really nice bread--very moist and sweet all by itself, without butter or any other spread. Easy to whip up too, which you know is a big hit with me!

Blueberry Orange Bread
Yield: 1 loaf

2 cups flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup orange juice
1/3 cup water
2 TB butter, melted
2 TB orange zest
3/4 cup fresh or frozen blueberries

Preheat oven to 350-F. Grease and flour an 8x4x2 in. bread pan (or spray with PAM cooking spray for baking).

In a large bowl, whisk together the dry ingredients. In another bowl, combine egg, orange juice, water, butter and orange peel. Add to dry ingredients just until combined. Fold in the blueberries. Pour into bread pan and bake for 65-70 min. or until a toothpick inserted near the center comes out clean. Cool for 10 min. Remove from pan to cool on a wire rack.

  2. MA- I came by to see the recipe but I found the banana bread nut bread one instead. Now that is something I like to bake, even if I have to follow the rules.
