I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

Buttery Almond Crunch

Mmmm, this stuff is SO GOOD. Tastes like the inside of a Heath Bar. It is crisp, but not as hard as peanut brittle. And it is EASY, easy, easy to make. No candy thermometer involved!

I found this recipe in Taste of Home magazine a few years ago. It makes a sweet gift given in a tin or cello bag, and of course, will be a  great addition to your holiday dessert tray!

Buttery Almond Crunch

1/2 cup butter
1 TB butter
1/2 cup sugar
1 TB light corn syrup
1 cup sliced almonds

Line an 8 or 9 inch square pan with foil; butter the foil with 1/2 TB butter.

Spread the sides of a heavy saucepan with the other 1/2 TB butter.

Put 1/2 cup of butter, sugar and corn syrup in the pot. Bring to a boil over medium-high heat, stirring constantly. Cook and stir until mixture is golden brown, about 5 minutes or so. It varies. Just watch for the color. Remove from heat and stir in almonds. Quickly pour into prepared pan. Let sit until firm, about 30 minutes.

Invert pan and remove foil. Break candy into pieces.

    In the name of all that's cholesterol, stop tempting us with your devilishly delightful wonderments. My cholesterol count jumps like a bacon infusion just from looking at your pictures. Then you add the word "easy." and I'm a goner.

    I hope a get a gym membership for Christmas after using your recipes for my parties.

  10. Now I have to try this just because you said it's not as hard as peanut brittle, which is a personal favorite of mine. You should see me every time those kids show up at my door...all I want is the brittle baby!

    See...I've gained 3 oz just reading this. I wonder if salivating is a form of weight loss? Hmmm....

  15. Um, excuseme, but why did blogger decide that I didn't need to see this post? Does he not realize how guilty I was feeling for not making peanut brittle nor nut rocha this year? The sleigh doesn't pull out again for just over 24 hours, so there is time for this for sure (provided I can catch the hubs before he leaves the store!)

  16. I make this ALL the time, but I substitute cashews (my husband's fave) or pecans for the almonds. It takes but 15 minutes of my time to whip out a batch, and it doesn't stick to the teeth like brittle does! I chop it up and add it to my cookie doughs! I love that it doesn't need a candy thermometer!
