I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.
These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

Lemon Brownies
For all you lemon lovers, here's another great recipe you will want to try for sure. These bars are fabulous! They are not like traditional lemon bars at all. True to their name, they really do have a rich, brownie like texture, and the glaze is the perfect sweet/tart topping.
I found this recipe on Becky Charms recipe blog. I made my own changes to the recipe and the glaze,

Lemon Brownies
Brownie
3/4 cup flour
3/4 cup sugar
1/4 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
2 TB lemon zest
2 TB lemon juice
Tart Lemon Glaze
1 cup powdered sugar
2 TB lemon juice
4 tsp lemon zest
Preheat oven to 350F. Grease or spray with Pam Baking Spray, an 8x8 inch baking dish.
Zest and juice two- three lemons and set aside.
In a small bowl, whisk together flour, sugar and salt. In a larger bowl, beat the butter still smooth. Add the flour mixture to the butter and cream together.
In a small bowl, whisk the eggs, lemon zest and lemon juice. Add to flour/butter mixture and beat at medium speed until smooth, about 2 minutes.
Pour into baking dish and bake for 23-25 minutes or until just starting to turn golden around the edges and a toothpick inserted into the center comes out clean. Do not over-bake! Cool completely before glazing.
To make the glaze, just whisk all the ingredients together (or use a fork). Spread the glaze over the brownies and let it harden. Cut into bars and serve.

ReplyDeleteMmm, I loved them too! I just wanted to say that in the recipe from BeckyCharms, the zest calls for 8 teaspoons, not tablespoons .. but far be it for me to deny anyone more lemon love! :) Enjoy everyone, and spread the recipe like you spread the glaze!
ReplyDeleteHello dear readers! I am so sorry about my lemon zest typo!!! As Becky so kindly pointed out, the zest amount for the glaze is 8 tsp, not 8 TB. Ack!!!
