I found this recipe in the February 2012 issue of Better Homes and Gardens. They were super easy to make and turned out really tasty! They are rich, chewy and gooey just like a real S'More.
The hard part is waiting til they cool to cut and eat them!
Inside-Out S'Mores Brownies
1/2 cup butter
2 oz. unsweetened chocolate
1 cup sugar
2 eggs
1 tsp vanilla
3/4 cup flour
9 graham cracker squares
1 cup mini marshmallows
Preheat oven to 350F. Line an 11x7x1 inch baking pan with parchment paper or grease/spray the pan.
In a medium saucepan, melt butter and chocolate over low heat. Remove from heat. Stir in sugar, eggs and vanilla until combined. Stir in flour.
Spread half the batter in the pan. Top with graham crackers. You may have to cut a few to fit. Sprinkle marshmallows on the graham crackers -- don't let them touch the sides of the pan. Carefully pour the remaining batter over the marshmallows to cover them completely.
Bake for ~25 minutes or until set. Cool completely before cutting into bars.
