I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

Cake Mix Apple Crisp

The other day I went to the store and came back with a bag of Granny Smith apples. My kids recognized the large bright green apples (as opposed to the smaller Golden Delicious apples I usually buy) and said, "Oh, are you going to make apple crisp?"  When I said "yes,"  their eyes lit up and big grins spread across their faces. They LOVE this dessert. There is something special about it compared to other apple crisp recipes. The "crisp" part is actually made out of cake mix.

I first tasted this dessert at a Pampered Chef  party. I could not believe the topping was made from cake mix. It is not only quick and easy to make, it is REALLY delicious. Served warm with whipped cream or vanilla ice cream, it is the perfect fall dessert.

Cake Mix Apple Crisp
Yield 8-10 servings

5 large Granny Smith apples
1 box yellow cake mix
1/2 cup butter
1 TB sugar
2 TB cinnamon
1/2 cup walnuts, chopped

Preheat oven to 350-F. Lightly butter a 9x13" pan or similar sized decorative baking dish.

Peel and slice the apples and place them in the pan. In a large microwave safe bowl, melt the butter. Add the cake mix, sugar, cinnamon and walnuts and stir until mixture is crumbly. You may have to get your fingers in there! Spoon the topping over the apples. Bake for 35-40 minutes or until topping is golden brown.

    It's funny what apple season will do to kids....my son brought me a bag of Granny Smith apples the other day and demanded me to make a pie. Okay, light on the demand....

  6. Oh Michael - this recipe is soooo ME! I LOVE apple crisp and the ease of using a cake mix - gonna make it very soon as I have apples that are begging to be eaten. SO glad you shared. I thought of you when I saw a very pretty big green bowl at the store today. =)
