Why This Blog?

Welcome!

Come in and make yourself at home. I'm so happy to be able to share my recipes here with you.

I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

I'm so glad you came to visit. Enjoy your stay!

Lemon Blueberry Biscuits

These biscuits actually melt in your mouth. I’m not kidding. The subtle lemon flavor enhances the blueberries just beautifully.  They are tasty plain but the lemon glaze puts them over the top!

I got this recipe from my friend Marsha Baker (what a lucky last name!) Marsha and I like a lot of the same recipes because we share the same philosophy – keep it SIMPLE and delicious!  Marsha has a baking blog called The Better Baker.  Check it out!

Lemon Blueberry Biscuits
Yield 12 Biscuits

2 cups flour
1/3 cup sugar
2 tsp. Baking Powder
½ tsp Baking Soda
1 8oz carton Lemon Yogurt*
1 egg
¼ cup butter, melted
1 tsp grated lemon peel
1 cup fresh or frozen blueberries

GLAZE:
½ cup powdered sugar
1 TB lemon juice
1 tsp. grated lemon peel

Preheat oven to 400-F.

In a large bowl, whisk the dry ingredients.  In a small bowl, combing the yogurt, egg, melted butter and lemon peel; stir into dry ingredients just until moistened.  Fold in the blueberries.  Drop by large spoonfuls onto an ungreased baking sheet. Bake ~15 minutes or until lightly browned.

*Make sure your yogurt container is 8 oz, not 6 oz.

Combine glaze ingredients and drizzle over warm biscuits.

Enjoy!
