Why This Blog?

Welcome!

Come in and make yourself at home. I'm so happy to be able to share my recipes here with you.

I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

I'm so glad you came to visit. Enjoy your stay!

Chocolate Chip Orange Scones

Here's another delicious scone recipe from my Simply Scones cookbook.

Chocolate Chip Orange Scones
Makes 8 scones

2 cups flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, chilled*
2 large eggs
1/4 cup orange juice
1 tsp vanilla extract
1 tsp grated orange peel
3/4 cup mini semi-sweet chocolate chips
Raw sugar for sprinkling on top (optional)

Preheat oven to 425F.  Butter a 9-inch-diameter circle in the center of a baking sheet.

In a large bowl, whisk together the flour, sugar, baking powder and salt.*  Cut the butter into small cubes and distribute them in the flour with a pasty cutter, or grate the butter in with a cheese grater (that is my preferred method).

In a small bowl, whisk together the eggs, orange juice, vanilla and orange peel. Add the egg mixture to the flour mixture and stir to combine. Add chocolate chips. The dough will be sticky.

With floured hands, pat the dough into an 8-inch circle in the center of the prepared baking sheet.   With a sharp knife or pizza cutter, cut into 8 wedges. Sprinkle with raw sugar if desired.  Bake for 20-25 minutes or until a toothpick inserted into the center of a scone comes out clean.  Remove from oven and cool for about 5 minutes. Re-cut into wedges if necessary.

*If you are using regular, salted butter, do not add the extra salt.

Happy Baking!

  12. I've been scrolling thru your blog and want to make everything!!
But, scones are my favorite food group! These look delicious. We are empty nesters as of two week ago. Five of our six kids and 14 grandchildren live out of state so I don't have as many here to eat my goods. But scones are great because I freeze the scone before baking and can pull out just as many scones as needed. They taste wonderful and I don't have 8 scones staring at me all day!
Long story short your blog is great--so many ideas!
    Have a great day.
