I bake mostly cookies, quick breads, muffins and scones -- sometimes pie, sometimes cake, but nothing too fancy. I prefer simple recipes that call for ingredients that I already have in my kitchen.

These are the recipes I will share with you. They come from family and friends, magazine clippings saved through the years, favorite cookbooks, and other blogs.

Oatmeal Cookies

I'm taking a break from the kitchen today while my 12 year old son, Jack, takes over. He is making Quaker Oatmeal Cookies with chocolate chips and walnuts in them. These really are the best oatmeal cookies in my opinion. Nice and chewy when not over-baked!

We like to make them all kinds of ways. Sometimes with no additions, sometimes with chocolate chips or butterscotch chips. White chocolate chips and cranberries are an especially good combo. My personal favorite is raisins and walnuts.

Do you have this recipe around? We usually buy the generic brand of oats, which of course, does not have the Quaker recipe on the package.  I have a really great cookbook called, "Best Recipes from the backs of Boxes, Bottles, Cans and Jars," and the Quaker recipe is in it.  Did you know that they first printed this recipe on their oats package in 1955? I didn't either. Just in case you don't have it, here it is.

Famous Quaker Oatmeal Cookies
Makes ~ 30 cookies

3/4 cup shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup water
1 tsp vanilla
1 cup flour
1 tsp salt
1/2 tsp baking soda
3 cups uncooked oats (I like to use 1 cup old-fashioned oats, and 2 cups quick oats)

Preheat oven to 350-F.

In a large bowl, beat together shortening, sugars, egg, water and vanilla until creamy. In a small bowl, whisk together the flour, salt and baking soda. Add to the creamed mixture and blend.  Stir in oats.  Scoop with your cookie scooper, onto ungreased cookie sheet. Bake 10-12 min. Cool on wire rack.

  1. I love some of your combination ideas-cranberries are great with oatmeal! Both of my kids love cooking-I'm determined that they will both have a huge repetoire before they leave home!

  2. Thanks for your comment! My kids like to bake but I do need to teach them more cooking stuff for meals and such. Usually I'm in such a hurry to get dinner out....

  3. Great picture of Jack! We too love the Quaker oatmeal cookies and you really can't beat this recipe. Since my family isn't fond of raisins, we usually just put chocolate chips and walnuts in them. My son Trevor loves to help as well, especially in the 'cleaning up the bowl' department....
